I Love You So Matcha-Chocolate Cake

Valentines Day is the perfect day to eat cake with your love, and this is the perfect cake for your Valentines 2019!

Low sugar (for a cake anyway), with natural sweetness and extra fibre from banana, and the added antioxidant boost from Matcha (green tea powder), means you can have your cake and eat it too!

Show your loved one you care about them AND their health with the 'I Love You So Matcha-Chocolate Cake' this Valentines day!

Matcha-Chocolate Cake

Makes one 8-inch cake

For the Matcha-Chocolate Cake:

1 2/3 cup Plain flour

1/2 cup Sugar

3/4 cup Cocoa powder

2 Tablespoons Matcha powder

4 teaspoons Baking Powder

1 Banana, mashed

2 cups Plant-based milk (I used unsweetened Almond milk)

1 teaspoon Vanilla Essence

For the Dark Chocolate Fudge Frosting:

1/3 cup Cocoa powder

2 Tablespoons Coconut oil, melted

2 Tablespoons Maple syrup

1/2 teaspoon Vanilla Essence

1/4 cup Plant-based milk (or as needed to thin to desired consistency)

Fresh berries & flowers, to decorate (I used blueberries, roses, thyme sprigs & flowers)

Preheat oven to 160C. In a large bowl, mix flour, sugar, cocoa, matcha and baking powder.

In a seperate bowl, mash the banana until smooth, then mix in the milk and vanilla essence.

Add the wet ingredients to the dry ingredients and stir until just combined (don't over-mix!).

Pour the cake mix into a lined and greased 8-inch cake pan and bake in the pre-heated oven for 30- 40 minutes, or until a skewer inserted in the centre of the cake comes out clean.

Cool the cake on a wire rack until cool to the touch.

Mix the frosting ingredients in a small bowl. Smooth the frosting over the cake and decorate with fresh berries and flowers.
