Spring is finally here! And as the weather heats up we swap the hearty warmth of curries, soups and stews for fresh salads full of beautiful spring vegetables and flavours.
This Turmeric Tahini Nourish Bowl is not only full of colour and flavour, but it packs one hell of a nutrient boost: antioxidants from the turmeric and vegetables, healthy fats from the avocado, low-GI carbohydrate and protein from the chickpeas and quinoa, gut-loving probiotics from the sauerkraut and the whole thing is packed full of fibre!

Turmeric Tahini Dressing
1/4 cup tahini
1/4 cup fresh lemon juice
1/2 teaspoon chopped garlic
1/2 teaspoon turmeric
Salt & pepper to season
Add tahini, lemon juice, garlic and turmeric to a food processor and pulse until smooth and whipped. Add iced water as needed until the desired consistency is reached - I like mine on the thicker side to smear over a plate and build salad upon. Season with salt and pepper to taste.
