This black forest breakfast parfait is the stuff breakfast dreams are made of! Crunchy cacao granola, lush coconut yoghurt, sweet cherry chia jam and the textural divinity of vanilla chia pudding combine to make this the ultimate luxury breakfast. AND its refined sugar free! So go ahead and treat yourself - you can thank me later!
*n.b. If you make the cacao granola, vanilla chia pudding and cherry chia jam the night before you plan on eating this beauty, in the morning you can pop this together in 5 minutes and it transforms into a pretty fancy 'eat-on-the-go' breakfast for a busy morning.
Black Forest Breakfast Parfait
- serves 4
For the cacao granola: (makes 3 cups)
1 1/2 cups rolled oats
1/2 cup unsweetened shredded coconut
1/2 cup raw walnuts
1/4 cup chia, flax or hemp seeds (or a combo)
1/4 tsp sea salt
1/4 cup raw cacao powder
1/3 cup melted coconut oil
1/4 tsp vanilla extract
3 Tbs pure maple syrup
For the vanilla chia pudding:
1 cup unsweetened almond milk
1/4 cup chia seeds
1 tsp vanilla extract
For the cherry chia jam:
1 cup cherries, pitted (canned or fresh)
1 Tbsp chia seeds
1 Tbs water
1 tsp lemon juice
Fresh mint to garnish
Make the cacao granola : Combine all ingredients, press into a lined baking tray and bake in a 160C oven for 15 minutes. Stir and bake for another 15 minutes. Cool completely before breaking into small clusters.
Make the vanilla chia pudding: Combine all ingredients into a small bowl, whisk, and refrigerate for 30mins or until seeds have doubled in size.
Make the cherry chia jam: Combine all ingredients in a blender until smooth.
Assemble! Layer the components into a glass or a jar in the following order: cacao granola --> cherry chia jam --> sprinkling of extra cherries --> vanilla chia pudding --> coconut yoghurt -->cherry chia jam --> cacao granola and finally, top with a dollop of coconut yoghurt, extra cherries and garnish with fresh mint. Bliss!
