Summer is the perfect time to get lots of fresh fruit and vegetables into your diet by eating refreshing summer salads! This salad is the perfect lazy weekend (or weeknight) throw-together salad which is ready in a flash!
Packed full of protein, fibre and healthy fats, this avocado, black bean, edamame and mango salad combines our favourite flavours of summer into a refreshing yet substantial salad, perfect to eat as a side dish for dinners or summer BBQs, or as a complete meal for a light work lunch.
Avocado, Black Bean, Edamame & Mango Summer Salad
1.5 cups edamame beans, cooked
1 can (or 1.5 cups) black beans, drained
1 can of corn kernels, drained
1 medium cucumber, diced
1 medium mango, peeled and diced
1 red onion, diced
Lite balsamic dressing
Salt & pepper, to taste
1 avocado, diced
A small handful of basil leaves, chopped
Add beans, corn, cucumber, mango and red onion to a large bowl.
Drizzle with lite balsamic dressing, season with salt and pepper to taste and toss to mix.
Scatter with diced avocado and chopped basil leaves and gently fold through.
Eat and enjoy straight away or chill before serving for an extra refreshing summer salad!
