Is there anything as cosy and warming as a hot bowl of porridge on a cold winter's morning? This porridge is luxuriously creamy and full of rich caramel deliciousness that you could be fooled into thinking this is a naughty treat! But no! Packed full of fibre, fruit, healthy fats and protein, this is a quick and easy super healthy option for a winter breakfast for you and your family. In fact, this could quite possibly be the perfect winter breakfast... I certainly think so.
Creamy Tahini, Maple & Vanilla Porridge
- serves 2
2/3 cup of oats
1 cup reduced fat coconut milk
1 cup water
1 Tbsp tahini
1 Tbsp pure maple syrup
1 tsp vanilla essence
salt to taste
mixed raw nuts and seeds, roughly chopped
2 figs, halved
extra pure maple syrup to drizzle
Add the oats, water and coconut milk to a pot and cook over medium heat for 5 minutes. Stir in the tahini, vanilla essence, and maple syrup. Divide between two bowls and top with figs, chopped nuts and seeds, and a drizzle of maple syrup. Eat and enjoy!
